Nacho Cheese Sauce

I found this recipe when I was planning my vegan super bowl menu. I came across it on Pinterest. The recipe is called “Vegan Nacho Cheese Sauce (Gluten-free, too!).” It is from “Gluten Free Vegan Pantry,” by Savanna.  The texture is spot on! The immersion blender helps to achieve the texture and it looks just like cheese. I use it to make grilled cheese and macaroni. There is endless amounts of things you can do with this sauce. Get creative and enjoy!

Instructions
  1. Place potatoes, water, carrots, onion and shallots into a medium sauce pan. Boil for 15 minutes or until potatoes and carrots are cooked. DO NOT DRAIN THE WATER.
  2. Pour entire contents of the sauce pan (all vegetables and cooking water) into a mixing bowl. Blend with the emersion blender until smooth
