Nacho Cheese Sauce
I found this recipe when I was planning my vegan super bowl menu. I came across it on Pinterest. The recipe is called “Vegan Nacho Cheese Sauce (Gluten-free, too!).” It is from “Gluten Free Vegan Pantry,” by Savanna. The texture is spot on! The immersion blender helps to achieve the texture and it looks just like cheese. I use it to make grilled cheese and macaroni. There is endless amounts of things you can do with this sauce. Nacho Cheese Sauce
Servings 6 people
Ingredients
- 2 cups potatoes peeled and cut into small cubes
- 2 cups water
- 1 cup onion diced I use yellow onion
- 1/4 cup shallots diced
- 1 cup carrots diced
- 1 Tbsp dijon mustard
- 1/4 cup lemon juice
- 1/4 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 cup nutritional yeast
- lawry season salt salt to taste
Instructions
- Place potatoes, water, carrots, onion and shallots into a medium sauce pan. Boil for 15 minutes or until potatoes and carrots are cooked. DO NOT DRAIN THE WATER.
- Pour entire contents of the sauce pan (all vegetables and cooking water) into a mixing bowl. Blend with the emersion blender until smooth
- Add the remaining ingredients and blend until until smooth and creamy
